My friend Sambie got me this amazing book for Xmas. This recipe is for a Hungarian pancake that was originally served folded around a pocket of jam. Now it’s found as a towering layer cake.
Mix together
6 eggs
3 cups flour
1.5 cups milk
1 tbs sugar
pinch salt
Then rest that in the refrigerator overnight. Next morning add
1.5 cups soda water
and throw your batter on the griddle. Once your pancakes are made, mix together
1/4 cup ground walnuts with
a little bit of honey and spread it in layers in between your pancakes with
a dollop of apricot jam.
Watch how much jam you use because it will make the whole bit super sweet. Top with whipped cream if you desire.
